muffin high

i made banana muffins on friday night after a craving for baked goods. who doesn't love a nice baked good? so i tried my best to make them as healthy as possible, since i knew over the next few days i'd be eating them basically by myself. (and i did- 10 of them over 4 days. sheesh! hello, embarrassment.)

i used this recipe, and then just altered it to fit what i actually had in my fridge. 2 smashed bananas, 1 cup sugar, 1/2 cup mayonaise, 1/3 cup skim milk, 1/3 cup veggie oil, 1 tsp vanilla, a dash of cinnamon, 2 cups whole wheat flour, 1 tsp baking soda, 1 tsp baking powder.  i sprinkled walnuts on a few, brown sugar on a few, and then left a few plain. cooked at 350 for 20 minutes.  all were delicious and i am already craving another batch (except i won't... since remember how i ate them all myself? matt- you should come home.)

muffins were actually a highlight of my work busy weekend.

    so then it's official. we're bffs.

    i love chocolate chips in my banana bread/muffins, but james hatesss. so, it's sad. i usually go halfvsies, but i forgot so i had to endure plain. :\
